Why we made the recipe?
This has been my go to easy, simple lunch for the longest time I can remember. I eat this 2-3 times a week for lunch. It all started off with me craving a poke bowl at home, so I decided to give it a crack! Since making the recipe every week on and off for the last year or so, I think I have nailed the best Salmon marinade recipe that will go with any of your favourite base salads. I now make this dish the night before for work or uni, so I know that I will have a delicious lunch the next day.
What we loved?
I love how flexible the salad can be. I often rotate through different toppings but the base salad is always consistent. I usually have vermicelli noodles and rocket as the base of the salad. I then like to switch up the rest of the salad topping with what I have in the fridge that week. Currently I have been loving the following yummy toppings: cucumbers, carrots, capsicum and pickled jalapenos. I hope that I'm not the only one who goes through stages where I either love or not enjoy eating tomatoes, although they do go really nicely in this salad too.
The taste of the salmon is this asian inspired sesame soy garlic salmon that can be plated with anything in your fridge. The flavour is not too strong where it over complicates the simplicity of the rest of the dish. At the end of the day it comes down to the salad dressing you pick to go along with salad! For the longest time I loved the ‘Kewpie Japanese Dressing Roasted Sesame’ (iykyk 😛), but after eating the same salad flavour for the longest time I decided to change it up. I now use the ‘Pandaroo Salad Dressing Vietnamese’ and have already gone through 2 bottles of this dressing.
I have included a link to my marinade recipe below, so please do check it out. Although this is my go-to, it really can be customised based on your preferred taste. For example, if you really like ginger, you can definitely add more (or none at all if you’re the other way inclined!)
There is also so much you can do with the salmon, not only having it with a salad bowl, I like eating it with rice and veggies!
What we didn’t love?
There isn’t much that I don't like about this recipe, as you can really tailor any aspect to your own preferences.
